Four Queen Bees Live On the Brown Palace Rooftop…

…And are given the royal treatment by dedicated beekeepers. With colony collapse disorder affecting the honey bee population, the Brown Palace decided to develop the Royal Bee Initiative in 2009 to do its part with helping in the preservation of the bee population and our beloved honey source.Rooftop Bees at the Brown Palace

With longer days and warmer temperatures, this is the time of year when the colony is growing rapidly. The queen will be reaching her greatest rate of egg laying, and the hive will be bursting with activity. In addition to caring for workers (female bees) and drones (male bees), the honeybees are also preparing to rear a new queen.

Each hive on the rooftop has a captivating name: V.I.Bee Sweet, Buzzingham Palace, The Buzzidential Sweet, and The Mile Hive City—chosen by a social media contest the Brown Palace hosted.  The surrounding nectar, pollen, linden trees and flora give the honey a discrete earthy, mint flavor, according to one beekeeper.  The estimated 400 pounds of honey to come from the royal bees will be collected for Brown Palace sweeteners and healing elixirs.

Brown Palace Saison Rooftop Honey Beer: With another batch of a limited time only beer in the works, the Wynkoop Brewery will develop a rooftop beer sold exclusively at the Brown Palace and Wynkoop Brewery.

Brown Palace-Branded Lip Balm and Soap: The locally made, organic lip balm and soap are available at the hotel’s coffee shop and spa.

The Spa at The Brown Palace: Sweet nectar is used at the hotel’s spa.

The Brown Palace Welcomes Michael Wright as Executive Sous Chef

We are very proud and excited to announce the promotion of Michael Wright to Executive Sous Chef at The Brown Palace Hotel & Spa.

From the age of 15, Chef Wright’s passion for food put him on a successful culinary path that lead to his most recent promotion to Executive Sous Chef here at The Brown Palace Hotel & Spa. He began his career in kitchens of local restaurants in Minnesota and went on to graduate from Le Cordon Bleu in 2004. After graduation, Chef Wright joined The Brown Palace Hotel & Spa team as an intern. Since then, he’s learned all aspects of the dining experience at The Brown Palace by working as banquet chef, Chef Tournant, and most recently as the chef at Ellyngton’s.

“I’ve learned through my years that you can learn something for yourself with every person that you meet,” said Wright. “Respect all of your ingredients and use them to the fullest.”

2013 National Western Stock Show’s Grand Champion Steer in Brown Palace Lobby January 25th

On January 25th, the 107th National Western Stock Show’s Grand Champion Steer will be led down a red carpet and put on display in Atrium Lobby here at The Brown Palace. Here are a few of our favorite desserts that are served right here at The Brown Palace.

Bourbon Bread Pudding at Ship Tavern 
This delicious bread pudding is a blend of caramel custard infused with bourbon layered with house-made croissants. Topped off with caramel Sauce, and Vanilla Bean Ice Cream.

Apple Cobbler at Ellyngton’s 
Apple cobbler may become one of your favorite apple desserts once you try this one from Ellyngton’s. Our old-fashioned crunchy cobbler is a mix of roasted apples with rum raisins, and topped with almond streusel and cinnamon apple ice cream.

Bananas Foster at Palace Arms 
This classic dessert is prepared table side for two in Palace Arms. During the preparation you will watch your bananas being tossed bubbling pan of dark brown sugar, butter, rum and cinnamon and served to you warm over ice cream.

Brown Palace Coffee Creme Brulee at Ellyngton’s
